Nectarine and Almond Tart
This tart recipe is great with most fruits but I have teamed it up here with nectarines as they are in abundance at the moment.

- PASTRY
- 250 grams plain flour
- 125 grams caster sugar
- 125 grams cold unsalted butter, cubed
- 1 egg
- ALMOND PASTE
- 125 grams butter (room temperature)
- 125 grams caster sugar
- 3 eggs
- 1 1/2 teaspoon(s) vanilla extract
- 250 grams almond meal
- 3 tablespoon(s) plain flour
- 8 nectarines cut into 1cm slices
Nectarine and Almond Tart Directions
- For the pastry, blend flour, sugar and butter in a food processor until it resembles breadcrumbs. Add the egg and blend again until the mixture starts to come together. Pour out onto bench and bring together to form a dough being careful not to over work the pastry. Flatten into a disc and allow to rest in the fridge 1 hour.
- To make almond paste, cream butter and sugar together in the bowl of an electric mixer. Add eggs 1 at a time, along with vanilla extract, scraping down sides occasionally. Add flour and almond meal and beat well until well combined.
- Line a 23cm (base measurement) tart tin. Fill evenly with the almond paste mixture and arrange nectarine slices on top. Allow to rest in fridge 30 minutes.
- Preheat oven to 160C. Cook tart for 40-50 minutes or until golden and cooked. Allow to cool, dust with icing sugar and serve.
