Beetroot Orange and Feta Salad

This salad can be served as a meal in its own right or as a side. Not only is it healthy but it tastes sensational. A salad that really satisfies.

Ingredients

  • 4 large beetroots
  • 3/4 cup(s) soft brown sugar
  • 375 mL white vinegar
  • 400 grams green beans, trimmed
  • 2 oranges
  • 2 bunches rocket
  • 1/2 cup(s) walnuts, toasted
  • 1/4 cup(s) Persian feta
  • balsamic vinegar and extra virgin olive oil to serve

Beetroot Orange and Feta Salad Directions

    1. To cook the beetroots, combine the beetroot, sugar and vinegar in a large saucepan and cover with water. Bring to the boil and then simmer for 1 hour or until tender. Allow to cool, then peel and cut each beetroot into 8ths.
    2. To make the salad, blanch the beans in boiling water until tender but still with a bit of a bite. Refresh in iced water and drain.
    3. Peel and slice oranges into rounds, then cut each round into quarters.
    4. Arrange beetroot, beans and orange on plates. Sprinkle with nuts and feta. Season and dress with a bit of rocket and finish off with a drizzle of balsamic vinegar and extra virgin olive oil.
